Chicken Shawarma with hummus

Another middle eastern inspired dish- Chicken Shawarma with hummus. Chicken breast pieces marinated and then pan fried served with hummus and plenty of trimmings. This version is super easy so it won’t take much longer than  going out and getting a take away version and with much less guilt. Make it before a night out and have it ready for the 3am cravings, but it’s just as good any other time. Pair the chicken and hummus with aubergine fritters, lettuce, tomatoes, natural yoghurt and flatbreads.  Serves 4.

Cooking: 10-15 mins


Marinated Chicken

  • 2 lemons, juiced
  • 1/4 cup olive oil plus 1 tablespoon for frying
  • 6 cloves garlic, minced
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons paprika
  • 2 teaspoons ground cumin
  • A pinch ground cinnamon
  • 1/2 teaspoon turmeric
  • Red pepper flakes, to taste
  • 4 chicken breasts, diced


  • 400g tin of chickpeas
  • 3 tablespoons sesame seeds
  • 1 garlic clove, peeled and smashed
  • 1 lemon, juiced
  • 6 tablespoons olive oil
  • Paprika (optional)
  • Olive oil, to drizzle (optional)
  • Salt, to taste


  • To make the marinade for the chicken: Add the lemon juice, 1/4 cup olive oil, minced garlic, salt, pepper, paprika, cumin, cinnamon, turmeric and red pepper flakes in a large bowl, stir. Add the chicken and mix well, ensuring that all the pieces are covered in the marinade. Cover and place in refrigerator to marinate for at least 1 hour and up to 12 hours.
  • Pan fry the chicken in batches, on a medium-high heat. Spread the chicken pieces in an even layer of your pan and leave to cook for 2 minutes or until golden and turn and cook for a further 5 minutes or until cooked through. If a smokey taste, griddle the chicken pieces on a high heat for approx 1 minute each side, or until lightly charred.
  • Toast sesame seeds in a pan on medium-high heat till lightly browned and fragrant.
  • Place sesame seeds into a mortal and pestle; grind as smooth as possible. Add a dash of olive oil and stir through.
  • Place chickpeas, ground sesame seeds, garlic, lemon juice and olive oil in a food processor (or use a stick mixer) and blitz until smooth. Season to taste. Enjoy.
