Norwegian waffles (Vafler)

Ahhh Norwegian waffles (vafler). The thinner, cuter, lovelier version of a waffle. They work well with a dollop of raspberry jam and sour cream or with Norwegian brown cheese as an afternoon snack. But there’s no reason why you can’t make them a serious dessert by adding peanut butter and chocolate sauce or fresh berries and vanilla ice cream. Even if you’re on the go, they can be folded up and nibbled on with little to no topping as they have enough sweetness, as well as warmth from the cardamon. If you’re not sure about investing in a Norwegian waffle maker (they’ll set you back around 35 on Amazon) you can try to cook them gently on a non-stick frying pan, like you would with pikelets. They still taste great! And if you do invest in a waffle maker, you’ll get to pretend that you’re in the lush surrounds of Norway’s rugged landscape without having to leave the comfort of your own home. Serves 4 (makes 8 waffles)

Preparation: 10 mins plus 20 mins resting time.

Cooking: 10-20 mins depending on your waffle iron.


  • 2 eggs
  • 1/2 cup caster sugar
  • 50g butter
  • 375ml buttermilk (or regular milk)
  • 2 tsp baking powder
  • 300g plain flour
  • 1/4 tsp cardamon (or roughly 3 cardamon pods, milled into a fine powder)
  • 1 tsp vanilla extract (optional)



  • Crack eggs into a large bowl. Add caster sugar and whisk until airy.
  • Place butter into a microwaveable dish or glass and microwave until just melted. Add to the egg sugar mix. Add buttermilk.
  • In a separate bowl, add baking powder and flour. Stir to combine.
  • Sieve the dry ingredients, whilst whisking, into the liquid  mix. Add cardamon or vanilla, whisk until combined.
  • Leave to stand for 20 minutes. Heat the waffle iron whilst waiting.
  • Ladle batter mix onto the waffle iron. Use the back of a spoon to spread the mixture onto the entire plate. Leave to cook for 2-3 mins.
  • Serve with your desired topping and enjoy!
