Apple cinnamon muffins with maple glaze

Many moons ago I bought a house and as a house warming gift, my mother gave me a book dedicated to muffins. It was the sort of gift that just kept on giving, because whenever I had a hankering for something sweet I could rustle up something quick and tasty with whatever was in the house. This recipe, whilst not in the book, has been used countless times when I’ve had extra apples that I want to use up. All the ingredients are always to hand and it’s super easy to make. It’s best enjoyed with a cuppa, on the sofa. Makes 12 muffins.

Preparation: 10 mins

Cooking: 25 mins



  • 2 cups plain flour
  • 1 tbsp baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 cup brown sugar
  • 2 apples, coarsely grated
  • 1 egg
  • 3/4 cup milk
  • 50g butter, melted
  • 1/4 cup icing sugar
  • 2 tbsp maple syrup



  • Preheat the oven to 200C (190C fan forced)
  • Sift flour, baking powder and ground cinnamon. Stir in sugar and apple.
  • Combine the egg with the milk, and then add the melted butter.
  • Make a well in the centre of the dry ingredients and add the wet ingredients. Stir until just combined.
  • Line a 12 cup muffin tin with muffin casings, otherwise grease the tin.
  • Fill the casings to three quarters full.
  • Bake for 25 minutes.
  • Combine the icing sugar and the maple syrup.
  • Allow muffins to cool on a cooling rack. Drizzle over the glaze and enjoy!
